Damson or Sloe Gin

Sloe Gin

1 lb sloes
8oz caster sugar
75cl gin
3 teaspoons glycerine

Method

Stalk, wash and prick sloes.
Put in wide mouth jar
Dissolve sugar in the gin.
Add glycerine to gin and pour over fruit.
Leave jar where it can be shaken each day for one month,
Next. leave in cool dark place for two months.
Strain out, drain and discard sloes.
Taste gin and sweeten if necessary
Bottle.
Leave six months before drinking.

Note' Damsons may be used instead of sloes, when strained use damsons for fruit tart.
