Japanese Rice Wine
(Saki)

 

Recipe

3 lb ordinary rice.
1 lb raisins, chopped.
3 lb sugar
1/2 teaspoon dried yeast

Method


Stir sugar until dissolved in 1 gallon of warm water.
Add rice and raisins.
Add yeast
Stir and cover.
Put in warm place and stir a couple of times a day for two days.
Leave alone for 12 days.
Strain and put in a Demi-John with airlock.
Strain each time sediment is seeable at the bottom.
When clear, ready to drink.

This is very potent!
