There is no great mystery to cooking fish – the trick is not to overcook it.   Master that and you will find that fish is not only delicious; it is beautifully simple and fabulously fast too.

A good fishmonger is worth his weight in gold.   If you are lucky enough to have one locally, ask about best buys and how to cook unfamiliar varieties and most importantly, pick up more recipes if they have them!

Cheap and cheerful Coley is far too good for the cat.   It may not look so appealing with its slightly grey flesh but, once cooked, it is as good as cod and half the price.

Flat fish in a flash – plaice, sole, are very quick to cook.   All you need is a squeeze of lemon juice, a sprinkling of salt and pepper and grill for no more than 3-4 minutes.

Fancy a change from the Sunday roast?   Treat the family to sea bass.   Roast whole, stuffed with herbs, drizzle with olive oil and limejuice and season.   Wrap in foil and bake 175 degrees C for about 30 minutes.

If you like pork chops, you will love tuna, shark and swordfish steaks!  With their meaty texture and strong flavour they are a real treat.   Cook them with soy sauce, chillies and hot spices for a Caribbean feel.
