Welsh Cakes

 

 

Ingredients:

250g plain flour
½ tsp ground allspice
½ tsp baking powder
175g butter, cut into tiny pieces
75g golden caster sugar
90g currants
1 egg
A little butter for frying
Crème fraiche and strawberry jam to serve.

Method:

Sift the flour, allspice and baking powder into a bowl.   Rub in the butter with your fingers until the mix resembles breadcrumbs( or wiz it in a food processor), stir in the sugar and currants then mix in the egg to bind together.   Bring the mixture together with your hands, kneading gently to make a dough then roll out to 1cm thick. Use 7 ½ cm cutter to make rounds.   Heat a frying pan to hot, melt the butter and cook the cakes for 1-2 mins on each side.

Serve hot with a dollop of crème fraiche (or cream) and jam.
