Ingredients:
375g mincemeat
250g currants
2 eggs
150g caster sugar
150g soft margarine
250g self raising-flour
32 paper cases
Method:
Combine all the ingredients in a large
bowl and beat well for about 2 mins.
Divide the cake mixture between the paper cases or
greased bun tins if preferred.
Bake in a pre-heated oven 160C gas 3 for205-30 mins
until golden and springy to the touch. Place on a wire rack to cool.
