Fruited Banana Loaf

 

 

Ingredients:

125g margarine, plus extra for greasing
250g self-raising flour
175g caster sugar
125g sultanas
60g walnuts, roughly chopped
125g glace cherries, quartered, rinsed and dried.
2 eggs, beaten
500g banana, peeled and mashed
1 kg loaf tin.

Method:

Grease the loaf tin and line bottom with greaseproof paper.
Put the flour in a bowl, add the margarine and rub in with fingertips until the mixture resembles fine breadcrumbs.
Add the caster sugar, sultanas, chopped walnuts, glace cherries and mix well.
Add the eggs and mashed banana and beat mixture until well blended.   Spoon into the prepared tin.
Bake in a pre-heated oven 160C gas 3 for about 1 ¼ hours until well risen and firm to the touch. A skewer insertedin the middle of the cake should come out clean.
Leave the loaf to cool for 5 mins then turn onto wire rack and peel off lining paper.
Slice when cold.
If liked, add grated lemon zest and 1 tsp ground mixed spice to the mixture for even more taste.
