Ingredients:
Chopped fresh basil
Chopped fresh parsley
2 tbsp olive oil
1 tsp salt
4 medium aubergines
6 garlic cloves, cut into thin slivers
175g Gorgonzola or Danish blue cheese, crumbled
175g Cheddar or Mozzarella, grated
Method:
In a small bowl, combine some basil, the parsley,
olive oil and salt.
Prepare the aubergines by cutting diagonal slits
one-third of the way into aubergines. Stuff the garlic
and chopped herb mixture into slits.. Put prepared
aubergines into an ovenproof dish and bake at 180 C for
40-50 mins until they are tender to the touch. Sprinkle
on the cheeses and bake for a further 5 mins. When
cheese is cooked and bubbling sprinkle with basil and
serve with a green salad and crusty bread. |
