Ingredients:
25g butter
2 red eating apples, cored and sliced
15ml soft brown sugar
15ml oil
1 large onion, thinly sliced
8 large sausages ( Cumberland or pork with leeks are particularly nice)
440ml can dry cider
5ml Dijon mustard
Method:
Heat the butter in a large frying pan. Add the apple slices, sprinkle
on the sugar and fry for 1-2 minutes on each side until just golden.
Remove with a slotted spoon and set aside. Add the oil and the onion
to the pan and fry gently for about 10 minutes, stirring all the time,
until very tender and golden. Add the sausages and fry for 3-4 minutes
until the skins are just browned. Add the cider and the mustard and
season with salt and black pepper. Simmer gently for 10 minutes and
then return the apple slices to the pan and simmer for a further 5 minutes.
Serve with mashed potato and peas or green beans.
