TOMATO AND ORANGE SOUP

Ingredients:

1 small onion, finely chopped
1 medium potato, peeled and cubed
2 397g cans good chopped tomatoes
150ml vegetable stock
Juice and zest of 1 orange

 

Method:

Place the vegetables and stock in a saucepan, simmer for 20 minutes until potato has softened. Liquidize until smooth. Add the orange juice and season serve with the orange zest and a swirl of cream.
