Ingredients:
1 onion, roughly chopped
2 garlic cloves, crushed
2 large chillies, broken in half
3tbsp vegetable oil
450g boneless chicken breasts, skinned and cut into stips
1 red pepper, deseeded and chopped
3tbsp soy sauce
2tsp caster sugar
3tbsp plum sauce
75g cashew nuts, toasted
Basil leaves
Method:
Add the onion, garlic and chilli to your wok with the oil and stir-fry
for 1 min. Add the strips of chicken and red pepper stirring constantly
cook for 3-4 mins. Mix the soy sauce, caster sugar and plum sauce
together and add to the wok. Fry for 1 min. Add the toasted cashew
nuts to the chicken and toss together. Sprinkle on basil leaves and
serve immediately with bread or rice.
