Pesto Mince:

Ingredients:

1 onion, chopped
1 clove garlic, chopped
450g lamb mince
110 mushrooms, sliced
400g can chopped tomatoes
3tbsp tomato puree
3tbsp green pesto
Salt and pepper
250g pack egg-enriched noodles
Parmesan cheese
Fresh basil
2tbsp oil

Method:

Heat the oil and fry the onion for 1-2 mins until starting to soften.   Add the garlic and lamb mince and fry for 8-10 mins until brown.   Add the mushrooms and fry for 2-3 mins.   Finally add the tomatoes, pesto, puree and seasoning, ( you might need a little extra water at this stage if too thick) then simmer for 15-20 mins until the meat is cooked and the mixture has thickened.   Meanwhile cook the noodles in salted water for 8-10 mins.   Drain well and put on plates.   Serve mince on top, scatter the basil and grate Parmesan cheese on top of mince.
