Ingredients:
250g pack nest noodles
5 spring onions, chopped
1 courgette, cut into matchsticks
6 eggs, beaten
8 cherry tomatoes, halved
17g mozzarella cheese, sliced
2tbsp oil
Salt and pepper to taste
Method:
Cook four noodle nests in lightly salted boiling water for 8-10 mins
or according to instructions. Drain. Heat the oil and fry the spring
onions and courgette for 1-2 mins until just tender. Remove from heat
and add the noodle nests to the pan. Beat the eggs with 4tbsp water
and seasoning, then pour over the noodles and vegetables in pan. Arrange
the tomato halves among the noodles and put cheese on top. Return
to the heat and cook gently for 6-8 mins until the mixture is set around
the edges. Place under a medium grill for 5-6 mins to set. Check
the middle is cooked before serving with a fresh salad.
Try to cover most of the noodles with the egg or cheese to keep them
soft- just allow a few to peep out and crisp up under the grill.
