Egg-Fried Rice with
Spicy Sausage:
Ingredients:
1 onion, finely chopped
3 garlic cloves, finely chopped
4tbsp vegetable oil
6 spring onions, finely chopped
2 red chillies, chopped ( optional)
175g chorizo or spicy garlic sausage, roughly chopped
350g rice, cooked and cold
3 medium eggs, beaten
Coriander, finely chopped
Method:
Stir-fry the onion and garlic in the vegetable oil for 1 min. Add
the chopped spring onions and chillies to the wok, add sausage and cook
on high for 1-2 mins. Add the rice and cook through then push to one
side. Pour the beaten eggs on the base of wok and stir-fry until slightly
scrambled. Stir in the rice mixture and toss until the egg has set.
Serve immediately with the coriander.
