Chilli Prawn Stir-fry

Ingredients:

1 bunch spring onions, trimmed and halved
2 large orange peppers, deseeded and cut into strips
175g trimmed mangetout
225g pak choi, leaves separated
1tbsp oil
225g bag large prawns, defrosted and drained
1 150ml bottle sweet chilli sauce

 

Method:

Heat the oil in a large wok or heavy based frying pan. Cook the spring onions and pepper strips for 3 minutes until beginning to soften. Add the mangetout and cook for further 2 minutes, then add pak choi leaves and prawns and cook on high heat for 3-4 minutes until prawns are hot and leaves have wilted. Add the sweet chilli sauce and cook for 1-2 minutes until piping hot. Serve immediately with rice. ( any vegetables can be added, baby corns are great or use up left over vegetables)
