Boursin and bacon pasta

Ingredients:

1 tbsp olive oil
2 shallots peeled and finely chopped
4 rashers smoked bacon, chopped
100g(4oz) button mushrooms, sliced
80g pack of Boursin cheese with garlic
2tbsp milk
200g (8oz) fresh long spiral pasta
Freshly ground black pepper

Method:

Heat the oil and fry the shallots and bacon for 5 minutes. Add the mushrooms and cook for a further 5 minutes. Add the Boursin and milk and stir into the bacon mixture. Cook the fresh pasta. Drain and add to the Boursin mixture. Season and serve at once with large glass of wine and fresh green salad.
