Herby Trout

 

Ingredients:

1 whole trout per person
150g brown or white breadcrumbs (makes 4)
Fresh herbs i.e. Parsley, dill, coriander etc, finely chopped
1 lemon

Method:

Preheat grill, medium.   Clean trout and remove head (get your fishmonger to do this)

Mix together the herbs and breadcrumbs.   Add a squeeze of lemon juice and a little grated zest.   Season to taste.   Fill the cavities of the trout with the mixture.   Line the grill pan with foil and brush with oil.   Put the trout under the grill and cook for 15-20 minutes, turning the trout carefully half way through cooking.   Serve with new potatoes and a fresh green salad.   The trout can also be baked in the oven for about 30 minutes medium heat.
