Smoked
Haddock With Tomatoes
Ingredients:
:100g Cheddar cheese, grated
15g butter
½ tsp mustard powder
2tbsp white wine vinegar
4 fillets smoked haddock fillets
2tbsp olive oil
1 onion, peeled and chopped
2 sticks celery, slice
6 tomatoes, chopped
1 can (400g) plum tomatoes
100g pitted black olives

Method:
Put cheese, butter, mustard and vinegar in a pan. Heat, stirring
continuously, over a gentle heat for 4 minutes, or until just melted.
Preheat grill to medium. Place fish on a foil-lined grill rack.
Spoon cheese mixture over fish and set aside. Heat oil in a pan.
Add onion and celery. Cook for 5 minutes until softened. Add fresh
tomatoes and cook for 1 minute. Drain the canned tomatoes and chop.
Add to pan with the olives and simmer for 8 minutes. Grill fish for
8-10 minutes until cooked through and cheese sauce is golden brown.
Divide tomato sauce between 4 plates. Place fish on top. Garnish
with parsley. Serve with new potatoes and green vegetables.
Tip: The cheese sauce makes a good and tasty toast topping on it’s
own
