Ginger Scallop Stir – Fry

 

Ingredients:

1 tbls sesame oil
25g butter
2 tsps grated ginger
1 clove garlic, crushed
250g scallops
6 spring onions, diagonally sliced
1 red pepper, deseeded and diced
75g button mushrooms, sliced
Salt and black pepper
2 tbls light soy sauce
1 tsp corn flour blended with 2 tbls cold water

Method:

Heat the oil and butter in a wok or large frying pan.   Add the ginger, garlic, scallops, onions, pepper and mushrooms and cook for 2-3 minutes.   Add the seasoning, soy sauce and blended corn flour.   Cook for a further 1-2 minutes until the sauce is thick and smooth.   Serve immediately on a bed of rice or noodles.
