Cheesy Cod Parcels

Ingredients:

1 500g frozen puff pastry
Rind of 1 lemon
Rind of 1 lime
1 100g pack of goat’s cheese with herbs, sliced into 4
Salt and pepper
4 fillets chunky cod or bass, skinned
Milk or beaten egg for brushing pastry

Method:

Preheat oven to 190 C.   Roll out the pastry to a 35 by 40cm rectangle.   Cut into 4 and place lemon and lime rinds in the middle of each piece of pastry.   Top with the cheese, seasoning and fish, skinned side up.   Brush the edges of the pastry with the milk or egg, fold over the pastry and seal edges to make a parcel.   Turn over and place the parcels, sealed edges down, on a greased baking tray.   Brush with egg or milk.   Make a small cut in the pastry to allow steam to escape.   Bake for 30 minutes until golden brown and crisp.   Serve with a fresh crisp salad and cherry tomatoes.
