Prawn and Soft Cheese Pate

 

Ingredients:

175g full-fat-soft cheese
3 spring onions, very finely chopped
250g prawns, cooked, peeled and chopped (leave a few prawns whole for garnish)
3tblsp lemon juice
Salt and black pepper
Dill or fennel, chopped

Method:

Beat cheese in a bowl with a wooden spoon until smooth.   Add spring onions.   Stir prawns into cheese mixture.   Add lemon juice, seasoning and dill.   Mix well together.   Divide mixture between four ramekins.   Garnish with prawns and herbs.   Serve with crusty bread and green salad.
