Vanilla Prune Muffins

 

Ingredients:

375g self-raising flour
1 level tsp baking powder
1 level tbsp  fruit sugar
175 prunes, chopped
1 medium egg
300ml soya milk
1 tsp vanilla extract
6 tbsp sunflower oil
Muffin tins lined with paper cases

Method:

Pre-heat oven to 200C gas mark 6.

Sift flour, baking powder and sugar into a bowl and stir in prunes.

Lightly beat together egg, soya milk, oil and vanilla extract and then stir quickly into prune mixture.

Do not overmix or muffins will be tough.

Spoon into baking cases and bake for 15-20 mins or until risen and firm to the touch.

Serve warm or cold.
